Don't make these in your skinny jeans.

Do you like Brownies? Then, I promise you, you are just gonna lurve these 'Blondies'.

I pinched the basic recipe from the irrepressible Amy Willcock (Queen of Aga Cooking but, after tasting these, my new Domestic Goddess) but couldn't resist tampering with it slightly. They are incredibly naughty, possibly even more calorific than their darker chocolate counterparts. But you only need a slicket to produce a total mouth-gasm. So enjoy (in moderation if you're watching your waistline, or at least not whilst wearing your favourite skinny jeans).

First, you'll need to get....

Ingredients:
360 g unsalted butter, softened
180 g smooth peanut butter
560 g caster sugar
3 eggs
2 tsp vanilla extract
435 g self-raising flour
75g white chocolate chips (optional but you'll thank me later)
sprinkling of lavender sugar (available in Waitrose, dahling)

Right, now you've got that unholy collection of goodies all lined up, here's what you do with 'em.

Directions:
  1. Pre-heat the oven to 180 C
  2. Beat the butter and peanut butter together until they're smoothly combined. Or 'fluffy' as Amy says. You're best off using electricity for this job so chuck it all in a Kitchen Aid or some such (I used my Kenwood blender and it kind of worked).
  3. Measure the sugar, eggs and vanilla extract into a large mixing bowl.
  4. Add the butters and mix everything together. Then sift the flour in and fold 'gently but thoroughly'.
  5. Stir in the white chocolate chips until evenly distributed.
  6. Line a 34.5 x 24 x 4 cm (or thereabouts) baking tray and pour mixture in. Level off surface and sprinkle with lavender sugar (my touch, hope you like it!)
  7. Bake for 20-25 minutes. Don't overcook as you want the Blondies to be slightly squidgy.
  8. Cool thoroughly - this was my downfall. In my eagerness to taste the results, I slid them out of my funky Eyecatcher baking tray and the sides started to ooze out. I managed to salvage them but next time I'll leave them be until completely chilled. Having said that, the warm pieces that I couldn't save were simply divine.

They're good served warm with ice-cream or straight from the fridge with a cup of Lady Grey - or whatever your poison is.

So there you have it. What's so great about skinny jeans anyway?

  2. CJ - The Blondies are certainly a good trade for skinnies - and have a far better feel-good factor!

    Personally I think the best thing about skinny jeans is Mitchell in Being Human. Mmmm...

  3. These sound fab Anna. Will definitely give them a try, although I shouldn't! Lavender sugar....will make my own in the summer - what a good idea!! (Who needs Waitrose?   4. Jen B - Hello! You're right, lavender sugar much easier to make than flogging over to Waitrose. Or maybe the IOW Lavender Farm sells it? I'm also a great fan of vanilla sugar and always put my used pods (if I've taken the seeds for ice-cream or cake) into a jar of sugar. Delish!

    Didn't realise you know my friend Nathalie!! No doubt will bump into you one way or another soon. Am thinking of having an IOW Mummy Bloggers in the summer so you'll have to come along to that with Zoe! Xx
